I chose raspberry and grapefruits because they're loaded with fibers.
1. Chop the vegetables
2. Beat the egg whites, the yolk and the almond milk.
3. Spray a small frying pan with oil and quick sauté the vegetables just until soft!
4. Put the vegetables on the side, spray the pan again, put medium-low heat and pour the eggs. Cook until the eggs are firm, add the vegetables on one side and fold the other half over top.
5. Add fruits to the plate and serve!

You can serve this recipe for breakfast, lunch or dinner. Prepare it in advance to bring in your lunch box, put it in a wrap (gluten free or whole grain is best) for an easy meal on the go or have it as an easy and quick post workout meal.
